Watercress Salad with Beetroot
- 3 tbsp ACADO Avocado Oil
- 2 tbsp lemon juice
- 1/4 chopped cilantro
- 2 large handfuls watercress
- 4 cooked beetroot, diced
- Salt and pepper
- Wash and clean watercress with 2 cups and 2 finely chopped cucumbers.
- Mix the watercress with diced beets.
- Make the dressing by whisking the ACADO Avocado oil, lemon juice, 1/4 chopped cilantro, salt and pepper for garnish.
- Drizzle over the dressing and serve immediately.
