Cold Avocado Soup
- 1-2 Cucumbers
- 1 Green pear
- 1 Avocado
- 10 leaves of fresh mint
- ¼ chopped pistachios
- ACADO™ Avocado oil
- Raspberry Vinegar
- Cold water
- Salt and Pepper
- 1. In a blender, mix a cucumber, green pear and an avocado.
- 2. Once they are mixed, add 10 leaves of fresh mint, ¼ cup chopped pistachios, half a cup of ACADO™ Avocado oil, 5 Tbsp. Raspberry Vinegar, salt and pepper.
- 3. Mix again and refrigerate for 2 hours.
- 4. Once it is cold, add 1 cup of cold water and mix for the last time.
Tip: Serve with a few small cubes of cucumber, a little bit of pistachios chopped and mint to give texture to the saucer!
