Cold Avocado Soup


Ingredients

  • 1-2 Cucumbers
  • 1 Green pear
  • 1 Avocado
  • 10 leaves of fresh mint
  • ¼ chopped pistachios
  • ACADO™ Avocado oil
  • Raspberry Vinegar
  • Cold water
  • Salt and Pepper

Directions

  1. 1. In a blender, mix a cucumber, green pear and an avocado.
  2. 2. Once they are mixed, add 10 leaves of fresh mint, ¼ cup chopped pistachios, half a cup of ACADO™ Avocado oil, 5 Tbsp. Raspberry Vinegar, salt and pepper.
  3. 3. Mix again and refrigerate for 2 hours.
  4. 4. Once it is cold, add 1 cup of cold water and mix for the last time.


Tip: Serve with a few small cubes of cucumber, a little bit of pistachios chopped and mint to give texture to the saucer!
